Abbey Bakes Choc Chip Cookies

In need of a hump day treat? Girl, I've got you covered. What could be better to lift your spirits than a batch of delicious homemade cookies? I certainly can't think of anything I'd like more! Seeing as I haven't shared any baking posts on my blog since January *gasp* when I guided you through my scrummy fruit scone recipe, I thought it was high time that I provided you with some more mouthwatering treats! Today, I'm sharing my tried and tested recipe for chocolate chip cookies, so get ready to DROOL.

 You will need:
  • Butter or margarine (100g / 4oz)
  • Caster sugar (100g / 4oz)
  • Plain flour (175g / 6oz)
  • Milk chocolate chips (100g / 4oz)
  • 1 egg (I used little Bantam eggs so I needed two, but one regular size egg will be fine!)
  • Vanilla essence (1/2 teaspoon)

Let's bake!
Step One: Preheat your oven. Turn it up to 180 degrees C / 350 degrees F / Gas Mark 4.

Step Two: Mix together the butter and sugar in a large bowl until light and creamy. I recommend using a wooden spoon for this process. Don't be afraid to beat the mixture and give it some welly!

Step Three: Mix in the egg and vanilla essence.


Step Four: Sift the flour into the bowl and mix in well. You should create a smooth mixture. Once you've done this, tip in the chocolate chips. 


Step Five: Grab a couple of baking trays and place a sheet of greaseproof paper on top. This will prevent your cookies from sticking to the tray. Then, take heaped tablespoons of your mixture and place onto the tray. Press down on each cookie until they're in a shape that you like. Repeat until you run out of mixture.

Top Tip: Make sure you leave plenty of space between each cookie on the baking tray. If they are too close together, when they expand during the baking process, they will all smoosh together and you'll have to cut the cookies apart.


Step Six: Bake your cookies for 10-15 minutes. When they're done, they should be a pale golden brown around the edges but still slightly soft in the middle. Once they've finished cooking, leave them to cool for a while before tucking in!


And there you have it - my delectable chocolate chip cookie recipe! If you want to double up the chocolate, use 150g of plain flour in this recipe, and add in 25g of cocoa powder for that extra choccie kick!
